George Kilborn, Jr., the General Manager of Camille’s, took a few minutes out of his day to tell us a little more about this one-of-a-kind restaurant and the impressive online reputation they’ve managed to build.
To start our conversation, we asked George what it is that sets Camille’s apart from their competition in Rhode Island. Here’s what she had to say:
“For so many years, Camille’s has been the place to be and be seen. Customers know we are going to take excellent care of them. There is definitely a prestige factor as well. We are the longest standing restaurant on Providence’s Historic Federal Hill. The history of Camille’s adds a little extra to the customer’s experience. We enjoy helping people and celebrate milestones, and it is something we are really good at.”
George went on to tell us that Camille’s opened in 1914 by the Parolisi family and was originally called Marconi’s Roman Garden. George started with the restaurant around 2006 and has been the General Manager for the past four years. They have won the Wine Spectator Award of Excellence each of the past four years.
We also wanted to know why they do what they do at Camille’s and how they give back and make the world a better place. Here’s George’s response:

Building Success Through Great Food and Great Service
When we asked George about their secret to such a strong online reputation at Camille’s, he said:
“It’s simply about great food and great service. Some restaurants try to add bells and whistles and experiment with new things but let either the food or service slide. We make an effort to practice genuine hospitality. We aren’t the type of place where we just act happy to see someone walk in the door; we really are happy to see someone walk in the door every time.”
Outside of building the kind of online reputation any business owner would envy, Camille’s has spread the word about who they are and what they do through radio ads, through television ads that air during the morning news and by holding an annual golf tournament that supports the children’s hospital.
