I and my family that lives in South Dakota have enjoyed your tamales. For the past year and a half I have been on a ketogenic diet of which low carbohydrate intake is key. Unfortunately, the masa is high in carbohydrate and not currently an allowed food. Almond and coconut flours are frequently used in this diet as substitutes for the higher carb containing flours. If you ever develop a low carb tamale, I would be first in line to try it.
