At the end of the day, people have a specific need. You gotta understand their needs and respond to their needs.”

We will always have the same dishes, so people get used to the quality, and come back for that. It’s so important to smile, be present, know the people you are servicing. We run a very small and special restaurant, about only twenty tables, so we like to know everyone we get the opportunity to serve.”
